Chocolate Brownies With Easy Cocoa Ganache

There’s always some space in the tummy for some fudgy Chocolate Brownies. Here’s one that is best served cold with a cocoa ganache. Mmm… it’s going to be a chocolatey Christmas!

You will Need:

  • 1 Cup Of Wheat Flour (Yes!)
  • 1 Cup Of Milk
  • ½ Cup Of Butter - Melted
  • ½ Cup Of Yoghurt
  • ¾ Cup Of Sugar
  • 1 pinch of Salt
  • 4 drops of Vanilla Essence
  • 1 Cup Of Cocoa Powder
  • 1 Cup Of Condensed Milk
  • Dark Chocolates
  • Nuts

How To Make The Brownies

Take the melted butter and mix it with the Yogurt. Once they are both well-combined, add in the sugar and wheat flour. You will have to check for the consistency! If your batter is getting too thick to mix, add milk until the batter flows as a thick string. Mix in ¾ of the cocoa powder, vanilla essence and ½ Cup condensed milk. To finish it off, fold in some generous amount of chocolate chunks and nuts. To be baked into an oven preheated at 250 degrees C for 45 minutes or until an inserted toothpick comes out clean.

How To Make The Cocoa Ganache

Pour ½ Cup Condensed Milk in a bowl and mix it with ¼ Cup of Cocoa Powder. Pop it in the microwave for 30 seconds and give it a good stir. Let it cool down.

Once your brownies and Ganache is cool, serve together with some sugar sprinkles or glace cherries. Perfect, chocolatey and filled with joy!

Eggless Fruit Cake

An easy to make cake recipe that will find its way to your Christmas parties. Like who wouldn’t enjoy a nice slice of moist and spongy fruitcake? Tune in for the mouth-watering fruit cake recipe!

You Will Need:

  • 340g Of Plain Flour
  • ½ Teaspoon of Salt
  • 150ml of Milk
  • 150ml Of Water
  • 1 teaspoon of mixed spices
  • 1 tablespoon of vinegar
  • 180g of Margarine
  • 1 teaspoon of bicarbonate
  • 180g of Caster Sugar
  • 60g Of Nuts and Dried Fruit Mix

How To Make Eggless Fruit Cake

Start off by preheating your oven at 170 degrees C. Stiff the flour, salt and mixed spices together in a bowl. Pop in the margarine and whisk until it resembles breadcrumbs. Add in the sugar and dried fruit mix. Mix the milk, water, vinegar, bicarbonate in a bowl and then add in the flour mix. Transfer it to a mould and bake it for about 1h 45 minutes or until the skewer comes out clean. Leave to cool down and serve with ice cream or some whipped cream.

Here’s a foolproof recipe that will be equally yummy as one with eggs.

You Will Need:

  • 1 ½ Cup of All Purpose Flour
  • 3 Tablespoon of Cocoa Powder
  • 1 Teaspoon of Baking Soda
  • 1 Cup Of Sugar
  • ½ Teaspoon of Salt
  • 5 Table Spoon Of Oil
  • 1 Tablespoon of Vinegar
  • 1 Cup of Water
  • Few drops of Vanilla extract.

For Frosting & Filling

  • 969 ml of Heavy Whipped Cream
  • ½ Cup of Powdered Sugar
  • 1 Teaspoon of Vanilla Essence
  • ½ Cup of Cocoa Powder

How To Make The Log

Preheat the oven at 200 degrees C. Take a baking pan and lay down a greased parchment paper or wax paper. Add flour, cocoa powder, baking soda in a bowl and mix. Follow by adding the sugar and salt. Mix oil, vinegar, vanilla extract and cold water in another bowl and slowing incorporate them with the dry ingredients. Spread the batter evenly in the prepared pan and bake it for 10-12 minutes. Do not over bake the cake! Allow the cake to cool down and roll it in a tube. Cover it with a towel and let it refrigerate for 1-2 hours.

How To Make The Frosting

Meanwhile, whisk the heavy cream and other ingredients in a bowl until it is nice and fluffy. Unroll the cake and spread the frosting inside. Roll it back again and use an angled knife to cut the tube. If you want, attach one piece of the cake tube so as it acts as a stump. Apply a thin line of frosting around the log and use a fork to scratch lines on the bark. It will look like an old log ready to be fired!
