Spring Animal Cupcakes

Add a little cuteness to your table, with these yummy delights!

INGREDIENTS ­­­­­­­______________________________________________________     

  • 1 Cup Unsalted butter at room temperature
  • 1 ½ Cup granulated sugar
  • Cup unsweetened cocoa powder
  • 1 tsp. Baking powder
  • ½ Tsp. Baking soda
  • ¼ tsp. Kosher salt
  • 2 Large eggs
  • 1 Cup of milk
  • 2 tsp. Pure vanilla extract
  • 2 ½ Cup all-purpose flour
  • 12 Regular Oreos



  • 1 lb. Confectioners’ sugar
  • 1 Cup Unsalted butter at room temperature
  • 2 Tbsp. Heavy cream
  • 2 tsp. pure vanilla extract
  • Gel food colouring



  1. Pre-heat the oven to 180 °c. Line 12-cup muffin pan with paper lines.
  2. Mix butter, sugar, cocoa powder, baking powder, baking soda and salt in a bowl. Add the eggs, mix until fluffy. Stir milk and vanilla, then add the flour until blended.
  3. Place 1 Oreo in each muffin cup. Spoon batter over tops, filling each about Bake for 20 to 25 minutes.
  4. ‘Buttercream’ - add butter until creamy. Gradually add sugar, heavy cream and the vanilla extract. Continue to mix until fluffy. Tint and decorate cupcakes as desired.



Carrot Bunny Cake

If you enjoy carrot cake, this one is for you!


  • 4 Large eggs at room temperature
  • ¼ Cup vegetable oil
  • ¾ Cup butter
  • 1 tsp. Vanilla extract
  • 2 Cups all-purpose flour
  • 2 Cups sugar
  • 2 tsp. baking soda
  • 1 Tbsp. Cinnamon
  • ¼ tsp. Nutmeg
  • ¼ tsp. Cloves
  • 1 tsp. Salt
  • 4 Cups grated carrots (about 5 carrots)
  • ½ Cup golden raisins



  • 2 8oz Packages cream cheese at room temperature
  • ½ Cup Unsalted butter at room temperature
  • 3 Cups powdered sugar
  • ½ tsp. Vanilla extract
  • 1 Bag coconut flakes
  • Green food dye
  • Jelly beans



  1. Heat the sauce pan over medium heat. Add the butter and allow to melt while whisking. When it starts browning, remove from heat.
  2. Pre-heat oven to 350 °c. Sift together flour, sugar, baking soda, cinnamon, nutmeg, cloves and salt. Set the mixture aside.
  3. Whisk eggs until frothy. Add oil, butter and vanilla extract. Add the dry mixture until combined. Then add the carrots and raisins. Place the mixture into the baking pan and bake for 35 minutes at 350 °c.
  4. ‘Frosting’ - add the cream cheese and butter into a bowl and stir until smooth. Add the powdered sugar until combined. Then add the vanilla extract and continue to mix.
  5. Take a handful of coconut flakes and add to a Ziplock bag. Insert green food dye and shake. Continue to add until desired colour is reached.
  6. Frost the cake and decorate as preferred.


Easter Dirt Cake

Quick to whip up and will defiantly tickle the sweet tooth!

INGREDIENTS ­­­­­­­______________________________________________________     

  • 1 Package Oreos
  • 1 8 oz Cream cheese soften
  • ½ Cup margarine
  • 1 Cup Powdered Sugar
  • 16 oz Whipping cream
  • 2 Boxes of vanilla pudding mix
  • 3 Cups Milk
  • 1 tsp vanilla
  • East candy bunnies, edible grass and candy Easter eggs



  1. Crush packet of Oreos and place in the pan.
  2. Mix cream cheese and margarine until smooth. Add in powdered sugar and fold in whipped cream.
  3. In a separate bowl, mix the vanilla pudding, milk and vanilla. Fold mixture in with the cream cheese batter.
  4. Pour over the crush Oreos and put in the refrigerator to set for few hours.
  5. Decorate the cake to your liking and serve.
